TL DR: Make Velveeta with your own awesome cheese, and get the cheesiest mac and cheese, ever! I scaled it up ~1.4x per person last time, and it was a little much. In fact, it was so rich in flavor that I would strongly recommend following the # of servings guideline in the recipe. No dilution of your cheese at all, and it literally is mac and cheese, no roux to get in the way. I used the Grafton cheddar for this, and it kicked ass. You only add 4% sodium citrate by weight, and it'll hold whatever cheese you add together and make the most intense cheese sauce you'll ever taste. Order some of that magic powder from Amazon, and it'll rock your mac and cheese world. The magic ingredient from the ingredients label: sodium citrate. So let's try to make Velveeta, except use your own awesome cheese. That shit is velvety, melts amazingly, and most importantly, doesn't fall apart when heated. You say: 'But if you only use cheese, wouldn't it break apart when you melt it?' Well, think Velveeta. You can't get any cheesier than that: no diluting your cheese, at all. Have you tried mac and cheese without a roux? That shit is cheesy.
